Greek Eggplants: Recipes
Eggplant in Greek is a real masterpiece of high culinary philosophy that will not leave anyone indifferent.
Eggplant is one of the main places in the list of favorite vegetables of the Greeks and is a popular ingredient that is part of many famous and delicious dishes of the national cuisine of Greece. The Mediterranean roots of dishes that are popular in this country can explain the originality and brightness of any dish prepared by the ancestors of Plato and Aristotle.
In Greek, eggplant sounds like melitzána - from which the names of many dishes that are popular with the Hellenes originated. Clearly, everyone has a taste called moussaka, which, of course, is worthy of the attention of all gourmets.
Greek Eggplant Recipe with Minced Meat
For the first time, this recipe was widely demonstrated by the famous culinary specialist from Greece, Nicolas Celementes, at the beginning of the 20th century. To make the dish with a rich and rich aroma, mousaka is recommended to flavor it with white wine.
The ingredients required for preparation are:
- eggplants - 700 g;
- potatoes - 500 g;
- minced meat - 500 g;
- onion - 2 pcs .;
- 3-4 canned tomatoes;
- cheese - 300 g;
- vegetable oil - 2 tbsp .;
- milk - 0.5 l;
- a glass of white wine;
- flour - 2 tbsp. l .;
- butter - 50 g;
- eggs - 2 pieces.
You need to prepare the cheese. To do this, rub it on a grater and temporarily set aside. After that, you should start preparing the sauce - first you need to melt the butter, fry the flour in it and pour the milk into the mixture, as well as the pre-beaten eggs. Stir everything and wait until thickened. At the end of cooking, add salt and pepper to taste, pour cheese into the resulting mass and add nutmeg.
To prepare the meat filling, you need to fry the minced meat, it is added to the pan in the already heated oil. As soon as it changes color, throw the previously chopped onion into the meat and fry the entire contents for 5 minutes. Then pour chopped parsley into the mince, add salt and pepper. Pour the tomato puree into the mince and wait until the filling warms up with the tomatoes.
For the preparation of the vegetable component of the dish you need to cut the eggplants and potatoes into plates and fry them in oil.
Then it is necessary to form moussaka - eggplants in Greek from the received blanks.To do this, oil the form with oil and lay out the casserole:
- half eggplant;
- half potatoes;
- minced meat in tomato sauce;
- half potatoes;
- half eggplant;
- sauce (fill them with the contents of the form).
Bake for 40 minutes at 200 ° C.
Eggplant stuffed with rice
Baked eggplants in the form of boats, stuffed with rice and vegetables, are a dietary, but at the same time, nourishing and appetizing dish. To cook eggplants in Greek oven (with rice) you need to prepare the following components of the dish:
- eggplants - 500 g;
- brown or white rice - 4 tbsp. l .;
- fresh tomatoes - 2 pcs .;
- onions - 1 pc .;
- dried basil - 1 tsp;
- Sunflower oil - 2 tbsp.
First you need to chop the eggplant in several places. This is done so that the vegetables during the heat treatment in the oven do not burst and do not explode. Next, you need to cover with a foil grid, on which the eggplants will be baked, put vegetables on it and put them in a preheated oven for half an hour.
After the allotted time, the vegetables should be taken out of the oven and cut along in half. Next, gently cut the pulp so that the skin is not damaged. Then the halves can be put aside, and the flesh can be chopped up with a knife.
Now you need to go to the preparation of the filling. Rice, filling with cold water, you need to boil over low heat for 20 minutes. Onion should chop and fry in sunflower oil for 2 minutes. Next, you need to chop the tomatoes and pour them to the onions. Simmer the vegetable mixture for 5 minutes, then add cooked rice, eggplant pulp and dried basil to the same frying pan. Salt, pepper, mix the contents of the pan and you can turn off the fire. Prepare stuffing stuffed halves of eggplants and decorate with greens on top.
Eggplant in Greek for the winter
Unfortunately, in winter there is no opportunity to purchase eggplants. However, some thrifty housewives found a way out of this situation and learned to stock up on canned vegetables.
To do this, you must prepare the following products:
- eggplant - 3 kg;
- pepper (sweet) - 0.5 kg;
- tomatoes - 0.7 kg;
- onion - 0.7 kg;
- greens - 25 g;
- ground black pepper - 5 g;
- ground allspice - 5 g;
- vegetable oil - 0.5 l;
- head of garlic.
Eggplants, peppers, and onions should be washed and peeled. Then cut the pepper with eggplant into pieces and blanch it: eggplants for 15 minutes, and pepper - 5 minutes.Then you need to do onions, cut it into half rings, 5 mm thick, and then fry with eggplants in vegetable oil.
Wash tomatoes with greens. Chop the greens with a knife and twist the tomatoes using a meat grinder. Next, the resulting gruel must be poured into an enamel pan, put in her eggplant, fried with onions, and pepper. Then add the garlic, previously passed through the garlic box, salt and pepper it. Stir the contents and heat to 80-90 ° C, not forgetting to stir the eggplants from time to time.
